Common questions

What should a restaurant opening checklist include?

Temperature checks on every fridge and freezer, a stock and date-label check, cooking equipment and sanitizer set-up, handwash stations, a clean dining room and restrooms, the till and bookings, a team briefing and the safety equipment. This template covers each of them.

What should be on a restaurant closing checklist?

Storing and labeling food, cooling cooked food safely, cleaning and sanitizing the kitchen, closing out the till, turning off the gas and equipment, and locking up. The closing page of this template sets out those steps in order.

Who should complete the opening and closing checklists?

The shift lead or manager on duty, with tasks shared between the kitchen and front of house. The person who signs off should check the work, not just the ticks.

Do these checklists meet food safety rules?

They follow common food safety practice, but the rules and limits differ by country and local authority, for example under the US Food Code or a UK food business’s food safety management system. Check them against your own food safety plan.
