What temperature should a commercial fridge be?

Most food safety rules require cold food to be held at 5 °C (41 °F) or below. For example, the US Food Code sets 41 °F, and Australian and UK guidance recommend 5 °C or below. Check the limit in your local rules and write it at the top of the log.

What temperature should hot-held food be kept at?

It varies by country. The US Food Code sets 135 °F (57 °C) or above, UK rules set 63 °C or above, and Australian standards set 60 °C or above. Use the limit that applies to you.

How often should fridge temperatures be checked?

At least twice a day, typically at opening and closing, and more often for busy units or hot holding. Your food safety plan or inspector may set a schedule.
