Which allergens must restaurants declare?

It depends on where you are. The US names nine major food allergens, the UK and EU list fourteen, and Australia and New Zealand have their own list. Use the list in your local rules, and include every one in your allergen matrix.

What is cross-contact in a kitchen?

When an allergen gets into a dish that shouldn’t contain it, for example from a shared board, a spoon used in another sauce, fryer oil, or unwashed hands. Even a trace can cause a severe reaction, so allergy orders need clean equipment.

Can a restaurant guarantee a dish is allergen-free?

Most kitchens handle allergens in the same space, so many can’t promise a dish is completely free of traces. Tell guests honestly what you can and can’t do, and let them decide.

What should staff do if a guest has an allergic reaction?

Call emergency services straight away if there are signs of a severe reaction, help the guest use their autoinjector, keep them still, and stay with them. Then tell the manager and record what happened.
